It all started with a simple frustration: why was it so hard to find a real, warm mekitsa in the center of Sofia? So we opened a door on 28 Graf Ignatiev — with one pan, a kilo of flour and a stubborn promise to never fry ahead of time.

What is a mekitsa?

The mekitsa is a traditional Bulgarian fried dough pastry, common all across Bulgaria under several regional names — “mekitsa”, “tiganitsa”, “prashenitsa”. It's made from a yogurt-based dough and fried in hot oil until it turns golden on the outside and airy on the inside.

Traditionally served with honey, cheese or jam, the modern version often comes with Nutella, cream cheese, fresh fruit, or even sweet-savory combinations. At Mekitsa & Coffee we keep the respect for tradition — and play with the fillings.

Four steps

How a mekitsa is made

No mysteries. Just technique, time and a little patience.

    Mix

    Flour, yogurt, eggs, a pinch of salt and baking soda. The dough rests for exactly 40 minutes.

  2. 02

    Shape

    By hand, never with a rolling pin — mekitsa loves the warmth of your palms. We tear small rounds.

  3. 03

    Fry

    Hot, clean oil. 45 seconds per side. Golden crust, airy inside.

  4. 04

    Serve

    Immediately, warm, with the filling of your choice. Eat with your hands, slowly.
